Lobster Appetizer
(Serves 4)

12 slices bread, crust removed, toasted
1 ounce butter
1 pound lobster meat, cooked, cut into thin slices
1 ounce red pimentos
1 each anchovy, finely minced
1 ounce caviar

Butter toasted bread. Arrange the lobster meat, anchovies, and pimento strips on the toast alternating the colors to give eye appeal.

Arrange on a serving tray with a doily underneath and sprinkle caviar over all. Garnish with lemon wedges and parsley.
